With just two of us, we don't eat the whole batch so I prepare them in 3 smaller pans. When it is time to take off the foil, I just take two of the pans out of the over and cool and freeze them. When I take them out they sit in the fridge overnight and thaw, so I put them in the oven, still covered,to bring them back to temperature, about 20 minutes, then remove the fail and proceed with the recipe.
