Pico Digallo sauce

I posted this in the vegetarian garden delight group, as well.

 

I kind of took this from the back of the box of Fantastic Taco Filling,but I

changed it a bit.

 

I used my mini food processor cause I didn't feel like dealing with cutting

things tonight.

 

1 tsp olive oil

1 clove garlic, chopped (I used minced, in a jar)

1 tablespoon lime juice

1/2 white onion

1 can, drained stewed tomatos

1/4 cup cilantro

1/2 teaspoon dried red pepper flakes

1/4 teaspoon ground cumin

1/2 teaspoon sugar

salt

pepper

 

Put into food processor, and grind it till almost puree, but not quite. pour it

into a bowl and warm it up, if you see fit. It makes quite a bit,and I have

enough for a couple of more taco meals.
