I searched the recipes and archives, but the searcher is not finding that word. Does anyone have any good mayocoba bean recipes? Does anyone use them as a substitute for pintos in refried beans or burritos? I found some at one of our locally owned markets, so I wanted to give them a try. They are good added to soups (like a vegetable soup or a mixed-veg stew). They are great in minestrone soups...I have used them in an Italian " beans-and-greens " soup that usually takes canellini beans. They can be added to mixed-bean chili just fine...I wouldn't say you have to have any speical recipes just for these beans--they are very versatile and tasty! (Yes, I also agree they'd make great burritos, re-fried " frijoles " and bean-dips. Try them out and see what you think!)
