Guest guest Posted October 15, 2009 Report Share Posted October 15, 2009 Spinach Pesto 1 (10 ounce) package frozen spinach, thawed and well drained or 2 cups fresh spinach, packed 3 tablespoons olive oil 1/4 cup Parmesan cheese, grated 2 tablespoons fresh parsley, chopped 4 cloves garlic 1 cup packed fresh basil In blender or food processor, combine all ingredients and pulse blend until finely chopped. With blender running, gradually add a small amount of water until mixture is well blended. Mix pesto with hot pasta, use in recipes or spread on sandwiches. Makes 20 Servings.
