Guest guest Posted October 15, 2009 Report Share Posted October 15, 2009 Italian Sausage And White Bean-And-Greens Soup 2 15 oz. cans navy or Great Northern beans 2 tablespoons olive oil 1 celery rib, diced 2 medium carrots, chopped 1 medium onion diced 2 garlic cloves, chopped finely 2 Tofurkey Italian sausages, diced 46 ounces Broth Freshly-ground black pepper 10 ounces frozen chopped spinach or kale 1/2 cup small shell pasta grated Parmesan cheese Drain beans of surface liquid. Place olive oil in large saucepan. Add celery, carrots, onion, garlic and sausage. Cook over medium heat, stirring occasionally. Add beans, broth and pepper. Bring to boil, then lower heat; cover and simmer about 35 to 45 minutes or until flavors are blended. Cook pasta according to package directions; drain.
