Other than the ghastly things that have been pickled (we really are NOT vinegar lovers or even likers), we adore all things beet. So a suggestion, if you garden, you might want to give a bit of space to the golden beet varieties. Very yummy. I often peel fresh beets, slice them medium thick, put them on a cookie sheet (one with sides preferably), sprinkle lightly with sea salt and roast in a medium 350*F oven till tender and roasted. The down side is living with a fellow beet freak. Often on the weekends, I'll discover that a jar of our canned beets is missing from the shelves and I'll find Carl sitting in the living room with beet juice dribbled on his shirt and an empty jar next to the chair. He always tells me that the cats did it but I have serious doubts. I wasn't able to garden this year, thanks to health issues, so we'll be buying them at the grocery store. I'm giving serious thought to putting a dozen or so plants in on the southern exposure and covering with a hothouse frame I made in the last century.
