butternut squash tips? and Recipe Re-post: Garlicky Baked Butternut Squash.

Wow, thanks for all of the good advice! The recipe I tried was Garlicky

Baked Butternut Squash, posted by Renee from Allrecipes.com. I think I would

use more garlic, but I wasn't too fond of the squash taste, it was too

sweet. I don't think I'd like it with brown sugar, that would be too sweet.

If you like butternut squash, though, this recipe would be good.

 

I already tried acorn squash with BBQ baked beans inside (Andrea's recipe)

-- liked that. Next squash to try: spaghetti!

Garlicky Baked Butternut Squash

Yields: 6 servings

INGREDIENTS:

 

2 tablespoons minced fresh

parsley

2 tablespoons olive oil

2 garlic cloves, minced

1 teaspoon salt 1/2 teaspoon pepper

3 1/2 pounds butternut squash,

peeled and cut into 1-inch

cubes

1/3 cup grated Parmesan

cheese

 

DIRECTIONS:

1. In a large bowl, combine the parsley, oil, garlic, salt and

pepper. Add squash and toss to coat.

2. Transfer to an ungreased shallow 2-qt. baking dish. Bake,

uncovered, at 400 degrees F for 50-55 minutes or until squash is just

tender.

this is an unusual recipe for butternut squash...id like to try it...what do you

do with the parm cheese?does it go on aftr coooked?

if you ever do try to peel a squash again (nice to saute in a pan)try using a

nice sharp peeler the kind with a centered handle

works well for me.

I put the cheese on in the last 10 minutes so it melts. It was ok, I just

don't think I like butternut squash. :)

I am sorry to read this. I used to dislike it too, until I took the recipe I saw

on Rachel Ray's 30 min meals show and tried it on squash. I don't use the same

spices she does, I kind of improvise each time, but I definitely only like

squash roasted in oven with olive oil and spices.
