butternut squash

Butternut and banana squash are a little swetter than acorn.  Delicata is more

like acorn too. 

Now kobacha can very sweet and often taste just like acorn.

I make pumpkin bread with butternut because it is sweet like canned pumpkin.

Wow, thanks for all of the good advice! The recipe I tried was Garlicky

Baked Butternut Squash, posted by Renee from Allrecipes.com. I think I would

use more garlic, but I wasn't too fond of the squash taste, it was too

sweet. I don't think I'd like it with brown sugar, that would be too sweet.

If you like butternut squash, though, this recipe would be good.

 

I already tried acorn squash with BBQ baked beans inside (Andrea's recipe)

-- liked that. Next squash to try: spaghetti!

Garlicky Baked Butternut Squash

Yields: 6 servings

INGREDIENTS:

 

2 tablespoons minced fresh

parsley

2 tablespoons olive oil

2 garlic cloves, minced

1 teaspoon salt 1/2 teaspoon pepper

3 1/2 pounds butternut squash,

peeled and cut into 1-inch

cubes

1/3 cup grated Parmesan

cheese

 

DIRECTIONS:

1. In a large bowl, combine the parsley, oil, garlic, salt and

pepper. Add squash and toss to coat.

2. Transfer to an ungreased shallow 2-qt. baking dish. Bake,

uncovered, at 400 degrees F for 50-55 minutes or until squash is just

tender.

Our family likes butternut squash steamed and mashed with a little salt. This is

the only way we like it too, because it is a bit sweet adding the brown sugar

for us is over kill.
