Guest guest Posted October 17, 2009 Report Share Posted October 17, 2009 Believe me this is very good, kind of a cross between pumpkin bread and my sweet potato bread recipe I posted previously. No one believes it's squash and it makes 2 loaves. One for you and one to give to a friend. Butternut Squash Bread 2 cups mashed cooked butternut squash (I cut in large chunks and steam) 1 cup canola oil 2 cups sugar 3 eggs beaten 1 tsp. vanilla 3 cups flour 1/4 tsp. baking powder 1 tsp. baking soda 1/2 tsp. salt 2 tsp. cinnamon * optional 1 cup chopped pecans or walnuts Preheat oven to 350 degrees, and grease two 8 1/2X4 loaf pans. In large mixing bowl combine, squash, eggs, sugar, vanilla and oil, and blend. In a separate bowl mix all the dry ingredients (except walnuts) and add to the wet ingredients. Stir until just combined. Fold in nuts. Pour into prepared pans and bake until toothpick inserted comes out clean. 60 minutes. Cool 10 minutes on wire rack. Remove from pans and continue cooling on wire rack. One blue star ; Sets on the hill. Call it back ; You never will. One more star ; Sinks in the past. Show me something ; Built to last.
