Guest guest Posted October 17, 2009 Report Share Posted October 17, 2009 Winter Squash are supposed to be dense adn hard, unlike summer squash which are more of a tender crisp texture. To peel, I trim off both the stem end and blossom end with a very sharp knife. Then using a cutting board, I hold the butternut squash upright with one of the cut end against the cutting board. I recommend using a Y shaped Vegetable Peeler that is heavy duty, such as the OXO brand. Then just start at the top of the squash and peel downwards towards the cutting board. Do this all the way around. Then flip ends, putting the other cut end against the cutting board and peel downward. Proceed doing this all the way around. Then cut the butternut squash in half shortwise, Then cut those two halves down the center and scoop out the seeds using a soup spoon. Cut into chunks on a cutting board, using a good sharp knife.
