Sicilian Tomato Sauce

2 1/4 pounds flavorful ripe

tomatoes -- or 2 x 14.5-ounce cans plum

tomatoes

1/4 cup olive oil

1

large onion -- finely chopped

2 garlic cloves -- crushed

1 tablespoon

tomato paste

2/3 cup tomato juice

1 pinch sugar

1/2 teaspoon dried

oregano

1/4 teaspoon dried thyme leaves

salt and freshly-ground black

pepper

 

If using fresh tomatoes, blanch them in boiling water for 20

seconds, then

remove them with a slotted spoon directly into ice water. Peel

and cut in half,

then seed and chop finely.

 

Heat the oil in a heavy

pan, add the onion and garlic, and cook until soft,

about 10

minutes.

 

Add the chopped tomatoes and tomato paste and cook for 5

minutes.

 

Add the tomato juice, sugar, and herbs, and simmer, uncovered,

for 1 hour over a

low heat, until reduced to a pulpy consistency. Season to

taste.

 

Makes 4 cups.

 

 

 

ARRABIATA SAUCE:

Add 2 teaspoons

chopped red chile to the onion and garlic at the beginning of

the

recipe.

 

This rustic tomato sauce forms the base of many dishes in Italian

cuisine, from

pizza to pasta dishes. Ideally use San Marzano tomatoes for

this sauce, as they

have a wonderful sweet flavor. If your tomatoes are not

well-flavored or of a

good color, use

canned.
