Guest guest
I tried these this evening. I made some according to the origional recipe and some according to the change someone suggested. They were better according to the origional recipe. The sauted chuncks of sweet potato still kept their taste and tasted too sweet. The mashed sweet potato along with the mashed beans blended the flavors and I perferred that. They were also easier to make. The ones made according to the origional recipe were quite good. My omnivore husband liked them quite a bit. I did hold back a bit on the chili powder and omited the cayenne entirely because I was afraid they would have too much kick. I am glad I did. I don't like food that bites back and with all the chili powder and the cayenne, it definately would have. Theye were plenty hot enough for my husband and me with just 2 tablespoons of chili powder and no cayenne. I agree that the spices seem to be a strange mixture, but are quite good. It all just blends in so nice. You need to use the large 14inch tortillas to be able to fold into a burrito. Even using the large tortillas I had filling left over. I was a skeptic about these, but they will be served in this house again. Katie
