" I have looked around to see if there were maybe some

kind of salad bar type things close by.

Subway was the only thing I saw.  other than going to HEB. "

Hi, and welcome!

I wish you all the best in your efforts to make healthy food choices!

While I've not been to a Subway in a long time, I remember I had a very nice

sandwich there that was made exactly as I wanted it.

Choose a whole-grain bread whenever you can; ask for TWO " sliced " cheeses, in

place of a meat or a meat-and-cheese...You can have as many of the " toppings " as

you like, and, (this is what made my sandwich special for me)--they usually have

a shredded cheese or two that they put in the salads or wraps--ask if you can

have some of the " shredded " cheeses, too, along with lots of veggie

toppings--and have them TOAST the sandwich before the veggies are added, but

after the cheeses.  It melts the cheeses and it's just WONDERFUL!

I think my sandwich had 3 or 4 cheeses--I like that.  I also like LOTS of the

other stuff and a tiny bit of mustard and/or mayo on it.  Olive oil and

sprinkled herbs are also good on it.

Some people like a veggie subway with just the veggies and not the cheese--just

follow your own tastes and see what you come up with!  Some places aren't very

accommodating to speical requests from vegetarians, but it's always okay to ASK,

no matter what!

Now, in a fast-food place, I don't like the idea of just a bun with only

lettuce, tomato and onion, mustard and ketchup on it.  Well, with a slice of

cheese, it might be okay, but the white bread (starchy-sweet) buns I am not a

fan of.  However, at HOME, I have tried sandwiches made with dark, hearty

whole-wheat bread, and LOTS of " layers " of romaine lettuce leaves, some filling

such as cheese, peanut butter, thin-sliced, seasoned firm tofu or chopped eggs.

I also like THINLY-sliced pieces of ripe bell pepper in a sandwich, sliced

olives, mushrooms, and occasionally hummus-spread.

In the summertime, wheat bread, spread with butter (I go for REAL butter--sorry,

it's NOT low-cal!) and piled with LOTS of thinly-sliced radishes with a pinch of

salt on them--OOOH!  I LOVE radish sandwiches!   Tomato sandwiches with

mayonnaise are also wonderful!

Best wishes and welcome!
