Guest guest Posted October 30, 2009 Report Share Posted October 30, 2009 My latest find from my library consortium is the book " Feeding the Healthy Vegetarian Family " by Ken Haedrich (there was an article in last week's " American Profile " that is part of our local town paper (it's a nationwide publication, I'm sure others have seen it) about some of his soup recipes). There are a few in this book I'd like to try - Curried Yellow Split Pea and Winter Squash soup; Winter Squash, Bean and Pasta soup; Braised Kale, Winter Squash (using Delicata! someone posted looking for ideas not long ago) and corn; Barley, Mushroom and Spinach tian; and Tempeh, Onion and Cheese Enchiladas are the ones that initially caught my eye. I also picked up a copy of a Taste of Home magazine of all soup recipes, several veg or easily adapted....still going through it!
