Guest guest Posted November 1, 2009 Report Share Posted November 1, 2009 My dh and I were basically raised lacto-ovo vegetarian. I grew up on an egg farm, so eggs were an essential part of our food. We also had out own cows and goats for our dairy products. We live on Vancouver Island BC and are thoroughly enjoying retirement. I heartily recommend it! We two are pretty much vegetarian, although we do occasionally eat fish and chicken and very seldom any red meat. But mostly what I cook is non-meat, and I really enjoy that style of food. And besides, less worry is involved with cooking that way. A very simple dish is to make a pot of chili pinto beans. Get some fritos or a favorite corn chip. Put some of those on the plate first, then a scoop of the beans which need to be a bit soupy. On that sprinkle grated jack and or cheddar cheese. Then put shredded lettuce, chopped tomatoes, chopped olives, diced green onions. Then top it with salsa or your favorite salad dressing and sour cream, or a bit of mayonnaise and enjoy. The only thing is it grows as it is getting piled onto the plate and you may end up with too much to eat. We call it " haystacks " . I am looking forward to the recipes!!
