Lot of pumpkins are thrown away..Why can't we use it for the preparation of nice and mouth watering sweet which everybody in the family love. This is an Indian dish.Try this and enjoy. Recipe for PUMPKIN HALWA Ingredients Grated pumpkin : 2 cups Milk Half a cup Honey 1 cup Sugar Half a cup . Cardamom 5 pieces - grounded Cashew nuts 10 pieces (broken into half) Ghee Quater of a cup (melted butter ) Safron Two pinches Method: As a fist remove moisture from grated pumpkin and keep aside. Coat a broad plate with a tea spoon of butter in all sides and set aside.( This is to keep tthe final product) Take two spoons of Ghee in a pan and roast cashews until they become golden brown. Remove the roasted cashew and set aside. Squeese the water from the grated pumpkin and set aside, Heat one Table spoon of ghee in a pan and heat it. Add the grated pumpkin to it and stir well in a low flame..This is to get rid of the raw smell from pumpkin.. Next add the milk to the pumpkin and cook. Then add sugar, honey, and stir constantly in a low flame.till the pumpkin cooked and becomes tender. Now add cardamom, cashew and saffron. Mix well and leave it for few minutes.. Add tea spoons of ghee to it and stir few times.in a low flame.Stir until the ghee floats above the contents .Remove and tranfer to the ghee coated plate, cool and serve.(Some prefer it a little warm ). Guest guest Posted November 2, 2009 Report Share Posted November 2, 2009 I discovered in the 70's that you can cook your kid's Halloween pumpkins even if they are carved. Once I found out that you could cook regular pumpkins, I started letting the kids carve the Jack-O-Lanterns on Halloween afternoon. Then I brought them in later that night. Sometimes, if I had time, I would bake the pumpkin, mash it and put it in freezer bags that night. If it was too late, I would just do it the next day. Sometimes I can the pumpkin in pint size canning jars and sometimes I freeze the mashed pumpkin. I did find that baking is better than trying to cut the pumpkin up and having to peel it. If you bake it, all you have to do is scoop the cooked pumpkin out of the shell. I have also, sometimes, cut part of the pumpkin in strips, peel it and then cut it into chunks to use in other cooked dishes. I don't like to waste food of any kind if at all possible, and not it is easier since we don't have any children at home to carve Jack-O-Lanterns for. I buy the pumpkin and then just cook it when I want. Pumpkins will last a long time if kept cool. Nancy C. Hi. I am Swamy residing at Atlanta.
