frozen spinach

I need some help. I have a bag of frozen spinach that I have had and simply

don't know what to do with.  I'm not a huge cooked spinach fan but I do not want

it to go to waste and I figured ya'll would know if anyone did some thing to do

with it.  We are having beans and cornbread for lunch today so anything that

might go with that (I don't have collards), would it be ok to cook it the same

way I do turnip greens and collards? Sounds silly but I've never heard of it

being cooked like that. lol Any ideas would be great!

How about a spinach casserole?

 

 

SPINACH CASSEROLE

1 pkg. chopped spinach, frozen

1/2 pt. sour cream

1/2 pkg. onion soup mix

1/3 c. water chestnuts, sliced thin

1/2 c. sliced mushrooms

Combine all ingredients in casserole dish. Bake,

covered, for 1/2 hour at 350 degrees.

I like to saute my spinach with garlic and oil.

I always have chopped frozen spinach in my freezer, either to add to soups (I

like the color it adds) or other dishes, like stir fry, in the winter when fresh

baby spinach isn't available or really expensive.

I also make a spinach casserole (sometimes use 2 boxes of spinach and one of

chopped broccoli, defrosted and squeezed as dry as possible), bread crumbs, egg

for binder, parmesan cheese, mushrooms, onions, shredded cheese (mozzarella,

cheddar etc), garlic powder, dill....I probably should write it down, I usually

just throw it together and bake for 30 mins!

My husband makes a vegan spinach artichoke side dish or dip out of it.

He made some today to go with the roasted cauliflower mashed potatoes I am

making to go with dinner.

My husband is not vegetarian my daughter and I are.

He is making his main course and my daughter and I are making ours.
