" Jacqueline Miller - Wooster, Ohio SERVINGS: 2 CATEGORY: Lower Fat METHOD: TIME: Prep/Total Time: 10 min. Ingredients: 1 cup thinly sliced cucumber 1 cup thinly sliced yellow summer squash 2 tablespoons chopped green onion 1 tablespoon shredded Parmesan cheese Dash crushed red pepper flakes 2 tablespoons prepared Italian salad dressing Directions: In a small bowl, combine the first five ingredients. Drizzle with salad dressing; toss to coat. Yield: 2 servings. Nutrition Facts One serving:3/4 cup Calories: 86,Fat:6 g,Saturated Fat:1 g,Cholesterol:2 mg,Sodium:298 mg,Carbohydrate:6 g,Fiber:2 g,Protein:2 g Diabetic Exchange: 1 vegetable, 1 fat. I slice them up and put them on raw veggie platters. The color they add is nice.
