It can also double as an hors d'oeuvre. 1 can (15-oz) chickpeas (garbanzos), rinsed and drained 1/2 small onion, thinly sliced 1/4 cup extra-virgin olive oil 1 Tbs lemon juice 1 Tbs red wine vinegar 2 garlic cloves, finely chopped 1/2 tsp dried oregano 1/4 tsp dried tarragon salt and pepper to taste Combine all ingredients in a bowl and toss to combine well.
