Guest guest Posted November 12, 2009 Report Share Posted November 12, 2009 In the current issue of Everyday with Rachael Ray, yes there are a few good vegetarian recipes and others that can be modified, anyway this recipe looks and sounds so good and I would like ideas what to serve with this either as a side or main course. French Onion Mac and Cheese 4 T butter 2 large onions sliced very thin 1 teasp. ground thyme 1 bay leaf salt and pepper 1 pound penne rigate 2 T flour 1 c vegetable stock 1 cup whole milk freshly grated nutmeg 3/4 pound of Gruyere cheese shredded in skillet , melt 2 T butter over medium-high heat . Stir in the onions, thyme,bay leaf for 5 minutes then salt and pepper. lower heat and cook until the onions are browned 10-15 minutes transfer to a plate and discard the bay leaf. meanwhile, prepare penne according to package directions, drain and return to pot In skillet melt remaining 2 T of butter over medium hear. whisk in the flour for 1 minute then add stock and milt bring to a boil. season with salt ,pepper, nutmeg lower heat and cook until thickened, about 5 minutes.
