Guest guest Posted November 12, 2009 Report Share Posted November 12, 2009 Jumbo Onion Cheese Muffins 2 cups flour 3 tsp baking powder 1/4 tsp pepper Dash ground nutmeg 1 1/4 cups milk 1/4 cup butter, melted 1 egg 1/4 cup chopped green onions 1/4 cup shredded part-skim mozzarella cheese 1/4 cup grated Romano cheese 1/4 cup shredded Parmesan cheese Preheat the oven to 400 F. Grease jumbo muffin cups. In a large bowl, combine the flour, baking powder, pepper, and nutmeg. In another bowl, combine the milk, butter, and egg. Stir into the dry ingredients just until moistened. Fold in the onions and the cheeses. Fill the prepared jumbo muffin cups two-thirds full. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean. Cool for 5 minutes before removing from the pan to a wire rack. Serve warm.
