Guest guest Posted November 15, 2009 Report Share Posted November 15, 2009 I often hear people say " I love to eat but hate to cook " . Most of the time it's because of the " dishes and mess. " For those of you in this catagory I have some suggestions. You can create an attractive, nutritious meal in one skillet. Mine happens to be a very old and perfectly aged iron skillet. This is how I do it. Peel and cube two potaotes Skillet fry in a scant amount of olive oil until browned Move potatoes to the side and cover with Monterey Jack Cheese or cheese of your choice. Add on the cleared side 1 or two eggs As the eggs start to set up I sometimes add chopped Nopalitos or chilis. Serve with slices of Avacado and Tomatoes Another hint: Clean up as you prepare food so you are not overwhelmed when you finish cooking. PS..This is my breakfast this morning but it can be served at any meal. Save all your wonderful veggie peels for your compost.
