I grate onions into tjhe potatoes and cook them in a well seasoned iron skillet, they are golden and delicious every time. I like them crunchy. Pat the shreaded potatoes with a paper towel to remove excess moisture. This is one reason hash browns can be *gummy*. Make sure the oil is hot,then turn only once when the hash browns are golden brown. Donna's well *seasoned* iron skillet is a must. I treasure mine. It's been in the family longer than I have and I'm 68. I like tater tots....no clue what it is that I hate about hashbrowns?
