Wednesday, November 25, 2009, 3:34 PM  Italian Spinach and Noodle Casserole Ingredients: * 8 oz. pkg. fettuccine noodles * 12 oz. carton small-curd cottage cheese * 8oz. pkg. Monterey Jack cheese, grated * 1-2 eggs, well beaten * 10 oz. pkg. frozen chopped spinach, thawed and drained * 1 Tbsp. dried parsley * 1/2-1 tsp. garlic salt * 1/8 tsp. pepper * 2 cup spaghetti sauce Directions: Prepare noodles according to package directions; drain. Mix together cottage cheese, Monterey Jack cheese, eggs, spinach, parsley, garlic salt and pepper in a large bowl. Add noodles and mix thoroughly. Pour into a greased 9x13 inch baking dish. Spread spaghetti sauce evenly over noodles. Bake in preheated 350 degree F oven for 30-45 minutes or until bubbly.
