For starters, it's so wonderful that the So Delicious company came out with a line of coffee/tea creamers based on coconut milk. That is one apt company name. Much better than anything else I've ever tried. Then, I got some Thai curry pastes. All it takes to make a delicious Thai curry is a few spoons of that, some coconut milk, and the ingredients of your choice. It makes me feel like an adept. Whatever I throw together in a coconut-based curry sauce tastes incredible. I was browsing through a few vegan cookbooks yesterday and came across a couple of interesting recipes. In Vegan Planet, there's a sweet potato gratin with pineapple and coconut milk. Holidays coming up and all -- doesn't that sound perfect? Then, in Veganomicon, there's a rutabaga mash using coconut milk. I love rutabagas, and I love coconut milk, so something tells me I'm going to be a happy camper at dinnertime. I'm going to make both of those today. I'll let you all know how they come out.
