Guest guest Posted December 5, 2009 Report Share Posted December 5, 2009 Cajun Vegetables 1 T. vegetable oil 8 oz. okra, sliced (2 1/2 c.) 1 c. frozen whole kernel corn 1 lg. onion, chopped (1 cup) 1 med. green, red or yellow bell pepper, chopped (1 c.) 3 large tomatoes, seeded and chopped (3 c.) 1 15-16 oz. can black-eyed peas, rinsed and drained 2 tsp. chopped fresh or 1/2 tsp. dried thyme leaves 2 tsp. chopped fresh or 1/2 tsp. dried oregano leaves 1/2 tsp. salt 1/2 tsp. paprika 1/8-1/4 tsp. ground red pepper (cayenne) Heat oil in 12 " non-stick skillet or wok over med-high heat. Add okra, frozen corn, onion and bell pepper; stir-fry 2-3 mins. or until crisp-tender. Add remaining ingredients; stir-fry about 5 mins., or until hot.
