Group Question Indian Potato Recipes

Excuse my ignorance here, but, I have seen a couple of recipes that require

items to be soaked in ice-cold water, and I wondered what the purpose of

that was?

HI the reason to soak the potatoes in ice cold water is when we put the

potatoes sticks or jullians after the ice cold water treatment then in hot

oil the stiks does not stick to each other
