It's so good that my partner and I polished off the whole loaf with dinner, and then I came here to share the recipe I added in 1-1/2 cups of a mix of raisins, dried cranberries, and walnuts. It's also very pretty. From Robin Robertson's Vegan Planet 1-1/2 cups soy or other non-dairy milk 1-1/2 tablespoons white vinegar 4 cups unbleached all-purpose flour 1-1/2 teaspoons salt 1 teaspoon baking soda 1/2 teaspoon baking powder 1. Preheat oven to 375 degrees F. Lightly oil a baking sheet 2. Combine milk and vinegar. Set aside. 3. Combine the dry ingredients in a large bowl & mix until blended. Add enough of the milk mixture to make a soft dough that is not too sticky. Knead just until the dough is smooth, about 3 minutes. Shape dough into a round loaf and use a sharp knife to cut an X in the top. Place on the prepared baking sheet. 4 Bake on the center oven rack until golden brown, about 45 minutes. The bread is done when it sounds hollow when tapped on the bottom. Remove from the sheet & let cool on a wire rack before slicing. Kaye, I use whole grain flour a lot, but I wouldn't for this recipe. I think the heftiness would ruin the amazing texture. It also just occurred to me that I should add that, despite my name, I don't have a drop of Irish in me. Just didn't want anyone to think I was comparing this to my grandmother's favorite recipe or anything I do love soda bread, though, and this is an extraordinarily good one!
