any vegan Christmas Cookies recipes?

I'm not sure what you mean by Christmas cookies, but Donna's Swedish

Ginger Cookies and Bohemians are fantastic. There's also a wonderful

recipe for chocolate-dipped hazelnut biscotti in our files. And I think

I've posted a chocolate chip cookie recipe. (These are all vegan recipes

I have one for vegan peanut butter cookies that is super healthy (and

delicious!). Can't remember which cookbook I got it out of, but I believe it was

a vegetarian cookbook for kids. Be careful, they burn quickly! I have made them

with honey and the applesauce, but for vegans you may want to use the maple

syprup.

 

 

Vegan Peanut Butter Cookies

1 cup natural peanut butter (I use Laura Scudder's salt-free)

1 cup honey OR maple syrup

1/2 cup unsweetened apple sauce OR mashed bananas

3 Tbsp vegetable oil

1 1/2 tsp vanilla

2 1/2 cups wheat pastry flour

1 tsp baking powder

1 tsp baking soda

1/2 tsp salt

1 cup chocolate chips (optional)

 

Directions

1.Heat oven to 350 degrees.

2.Grease cookie sheet and lightly dust with flour (or use baking mat)

3.In bowl, whisk peanut butter, syrup or honey, applesauce or bananas, vegetable

oil, and vanilla until smooth.

4.In large bowl, mix flour, baking powder, baking soda, and salt.

5.Make a well in center of dry mix.

6.Pour liquid mix into dry mix and stir until well-blended.

7.Add chocolate chips and stir.

8.Shape dough into 1 1/2 " balls. (Refrigerate dough if too sticky).

9.Place on cookie sheet.

10.Dip fork into flour and press down on cookies to flatten.

11.Bake 10-12 minutes, carefully watching to avoid burning.

12.Cool on racks.
