Thanks, I have a ton of dried cranberries to bake with.  I love the idea of

adding them to the bread.

This is one of the best breads I've had. It's so good that my partner

and I polished off the whole loaf with dinner, and then I came here to

share the recipe :) I added in 1-1/2 cups of a mix of raisins, dried

cranberries, and walnuts. It's also very pretty. :)

 

From Robin Robertson's Vegan Planet

 

1-1/2 cups soy or other non-dairy milk

1-1/2 tablespoons white vinegar

4 cups unbleached all-purpose flour

1-1/2 teaspoons salt

1 teaspoon baking soda

1/2 teaspoon baking powder

 

1. Preheat oven to 375 degrees F. Lightly oil a baking sheet

2. Combine milk and vinegar. Set aside.

3. Combine the dry ingredients in a large bowl & mix until blended. Add

enough of the milk mixture to make a soft dough that is not too sticky.

Knead just until the dough is smooth, about 3 minutes. Shape dough into

a round loaf and use a sharp knife to cut an X in the top. Place on the

prepared baking sheet.

4 Bake on the center oven rack until golden brown, about 45 minutes. The

bread is done when it sounds hollow when tapped on the bottom. Remove

from the sheet & let cool on a wire rack before slicing. Best eaten the

same as it's made, and ideally when it's still warm from the oven.
