The only brown bread I've had is what I've baked from a recipe that made no claim of being authentic, but it was very good and a lot denser than this recipe. I wish I'd thought to get a photo of a slice, instead of just the loaf, so I could do a better job of describing the texture. I'd love to know how the combination of flours works for you. On a different topic, (I think?) you asked me months ago if the chickpea cutlet in Veganomicon had a meaty texture and I said I wasn't sure. I tasted my first Field Roast a few weeks ago, and now I think I better understand what you meant. (I didn't realize any of the analogs came that close. It was a little scary for me, lol.) So...many months later, no, I don't think the chickpea cutlet has a meaty texture, at least not when it's baked. I haven't tried making it on the stovetop. Am I going to have enough vegan recipes? Not to mention the vegan cookbooks I already have - " How It All Vegan " , " Mediterranean Vegan " , etc etc. Leave no vegan recipe unturned! I'm afraid of the huge bill I'll have at Books-a-million when I go to pick up my new cookbooks.
