My granddaughter loved it. ---------- Mock Tamale Pie 2/3 cup TVP chunks 2 tsp vegan Chicken Bouillon 1 tsp Onion powder 2 tbsp. catsup 5 corn tortillas 1- 16 oz. can of corn, drained 1- 16 oz can of diced tomatoes, undrained 1- 16 oz can of red kidney beans, drained 1- can of cream of mushroom soup 4 ounces of milk Chili powder 1/2 tsp oregano red pepper flakes 1 cup of grated cheddar cheese Pour boiling water over the TVP. Stir in onion powder, catsup and bouillon. Soak for 10-20 minutes. Stir together milk, mushroom soup, chili powder, oregano and red pepper flakes. Put a couple of tbspsful of this mixture in the bottom of a greased round baking dish. Lay a tortilla over, then sprinkle with 1/4 of the beans, corn, tomatoes and TVP (drain off any of the unabsorbed soaking liquid) . Spread with 1/5 of the remaining soup mixture. Continue to layer, ending with a tortilla topped with soup mixture. Press down gently to eliminate any air pockets and to submerge all the tortilla in liquid. Bake uncovered at 350 F. for about 35-40 minutes. Add cheese to top, return to oven and bake another 10-15 minutes, until hot and bubbling and cheese is melted.
