Guest guest Posted October 14, 2007 Report Share Posted October 14, 2007 Just thought I'd share that I made some parsnips pancakes (instead of potato pancakes) for anyone who is trying to eat more root veggies. I put in the food processor or blender cut up onion, 3-4 parsips (cut ends off), like 1/2 - 1 potato, you can also put a sm. amount of carrots, a few TBLS of flour, salt & pepper, 2-3 eggs. and then blend. I fry them in veggie oil and drain on a plate with paper towels. This was the first time I made them, saw in a cookbook, liked them they are a little sweet and thought applesauce would be nice with them...
