Ghee can be stored for months without refrigeration, but one must be very careful not to introduce any bacteria into the container during use. This means that one should only use a clean dry spoon to get it out. If you rinse the spoon, or use it for something else, dipping again into the ghee will cause it to go bad. It is always safest to use a fresh utensil everytime. And make sure everyone else who cooks knows this too.
