They are Sattwa, which is equanimity or balance, Rajas which is excitement, or activity and lastly Tamas which is dullness sloth etc. Everything in the Universe goes through these on a continual basis. Without the movement of these Gunas or modes, there would be no 'creation', for everything would be in perfect balance or Sathwa. The idea is get oneself in a perfect state of Sattwa by spiritual practice and staying off rajasic and tamasic foods like meat, onions, spice, fermented, preserved etc, for example. The Vedas say only when man has overcome the three gunas that he would be able to get rid of the Maya which makes one see the unreal as real, (or gives one the illusion).
